William Dean Classes

pinacoladaWe are excited to start our DIY series of classes at William Dean Chocolates. These classes are designed for the non-professional to get the basic knowledge and skills to make their own chocolates and pastries. We welcome you into our kitchen where you will learn to make a variety of artistic and delicious creations.

Confections

Classic confections are becoming a lost art and in this class, they will be rediscovered. We will teach you how to make some of the most popular confections which include the following:

  • Nougat Montelimar (similar to torrone)
  • Pate de Fruit (classic French fruit jellies)
  • Butter crunch and Toffee
  • Rochers (Almonds and chocolate)
  • Grigotine (classic French white chocolate with pistachio, candied orange peel, almonds and caramelized rice

You will learn all the essentials to make these confections for your friends and family. This will include recipes, techniques and each person will take home a ballotin of confections from the class.

French Chocolates

Here is your chance to create your own beautiful and delicious chocolates. We will use the French style of making chocolates with slab ganache that is cut and then "enrobed" with a thin layer of chocolate and hand decorated. We will make slab ganache that includes multiple layers with pate de fruit, marzipan as well as ganache.

You will learn all the essentials to make these chocolates for your friends and family. This will include how to make the slab ganache and to cut it with a guitar cutter or by hand and decorating techniques. Each person will also take home a 20 piece box of chocolates.

Cookies & Cupcakes

Learn to make a variety of cookies and designer cupcakes.

Cookies will include:

  • Shortbread/Sable
  • Florentines
  • Sandwich Cookies
  • Biscotti
  • Elephants Ears/Palmiers

Cupcakes will include:

  • Lemon Meringue
  • Chocolate Guinness
  • Hazelnut Caramel

You will learn all the essentials to make these cookies and cupcakes for your friends and family. This will include recipes, finishing techniques and each person will take home an assortment of cookies and cupcakes from the class.

French Cakes

Learn to make a variety of beautiful and unique small French cakes.

Cakes will include:

  • Financiers
  • Cannelles
  • Madeline's
  • Chocolate Crumb Cake
  • Bouchons
  • Chocolate/Pistachio cake

You will learn all the essentials to make these cakes for your friends and family. This will include recipes, finishing techniques and each person will take home a ballotin of truffles from the class.

French Tarts

If you've ever wanted to learn to make some of the classic French tarts, here is your chance. This class will cover the fundamentals to make a variety of tarts including:

  • Salted Caramel Tart
  • Rustic fruit tart with brown butter
  • Fruit tart with frangipane
  • Lemon tart made with homemade lemon curd
  • Fruit tart made with homemade pastry cream

You will learn all the essentials to make these tarts for your friends and family. This will include how to make the dough, fillings as well as recipes. Each person will also take home one of each of the tarts we make in class.

Bon Bons

Here is your chance to create your own beautiful and delicious chocolates. Using the traditional Belgian style of making chocolates with polycarbonate molds you will learn how to paint/airbrush chocolate molds as well as how to create the centers. You will learn a variety of techniques to create stunning "painted" chocolates.
You will learn all the essentials to make these chocolates for your friends and family. This will include how to make the chocolate shell and the center. Each person will also take home a 20 piece box of chocolates

Truffles

Truffles are one of the oldest forms of chocolate and here is your chance to learn how to make them. You will learn the history of the chocolate "truffle" and a variety of techniques to make them which will include piped truffles, scooped truffles and using truffle shells.
You will learn all the essentials to make these chocolates for your friends and family. This will include recipes, finishing techniques and each person will take home a ballotin of truffles from the class.

French Macarons

The Macaron is one of the hottest culinary items now. Here is your chance to learn the history of the macaron and also how to make them. This class will cover the fundamentals including different styles of meringue used to make the shell (Italian, Swiss and French) as well as different options for centers (ganache, buttercream, jelly and caramel).

You will learn all the essentials to make macarons for your friends and family. This will include how to make the shell, fillings as well as recipes. Each person will also take home a 12 piece box of macarons. There will be plenty of tasting the macarons in the class as well.

Requirements

  1. Participants must make reservations in advance as space is limited and classes sell out quickly. Call us at 727-593-0656 to make a reservation or register at EventBrite. All reservations require payment.
  2. We require participants wear minimal jewelry, closed-toed shoes and long pants as you will be working in our factory with food product. You must have closed-toed shoes to participate. Aprons and hair nets will be provided.
  3. All tools, equipment and ingredients will be provided for each participant.
  4. Participants must be at least 18 years of age (unless accompanied and supervised by parent or legal guardian).
  5. Please provide at least 72 hours notice should you need to cancel your reservation.
